The Best Rich & Fluffy Pumpkin Spice Pancakes

These Pumpkin Spice Pancakes are rich and fluffy pillows of pumpkin heaven. Made with pumpkin puree and pumpkin spice flavors it is like having dessert for breakfast.

Pancakes are one of my favorite breakfast foods because they are really quick to make.

Its also one of the most versatile morning meals that tastes good sweet or savory.

Contrary to my Vegan Banana Pancakes with maple pecan whisky sauce, these pumpkin spice pancakes are made the more traditional way with milk and eggs and the addition of naturally sweet pumpkin puree and fragrant spices.

To Note, these are amazing on their own, however for a brunch or large lunch try out my Homemade Maple & Sage Turkey Sausage. The sweet and salty pairing is outstanding, not to mention sage and pumpkin flavors merry quite well.

Making Pumpkin Spice Pancakes

Making pumpkin spice pancakes are really simple to make:

  1. In one bowl whisk all the dry ingredients together
  2. Mix eggs, milk and room temperature melted butter together. If the butter is too hot it will cuddle the eggs.
  3. Combine wet into dry then pumpkin puree and whisk until smooth.
  4. Heat greased pan on medium low setting, Pour in the batter and cook until bubbles form.
  5. Once the top has created bubbles/holes (like a crumpet) flip and cook for another minute or until they can slide out of the pan.

Tips on Making Pumpkin Spice Pancakes

  • For perfectly shaped pancakes, I suggest cooking them in a smaller skillet one at a time. It takes longer yet, but you get perfect circular pillows every time
  • Cook on a low setting. This allows the pancakes to steam instead of fry so you get soft fluffy disks.
  • For a healthier option switch out the sugar for applesauce. They will be a little denser but still just as good.

How to Store Left overs

Cooked pancakes will keep in a sealed container in the fridge for up to 1 week. Pancake batter will keep in the fridge for 3 – 4 days, however the pancakes will not cook as fluffy so cooking them all at once is probably best.

How to Make Pumpkin Spice Pancakes

These pumpkin spice pancakes are Fluffy & Rich with a fully loaded pumpkin spice flavor from freshly pureed pumpkin and fragrant mixed spices.

Pumpkin Spice Pancakes

 1 cup AP Flour
 1 ½ tsp Baking Powder
 ½ tsp Baking Soda
 ¼ cup Sugar
 1 ½ tsp Cinnamon
 ½ tsp Ginger powder
 ¼ tsp Nutmeg
 Ground cloves
 14 tsp Salt
 2 tsp Melted Butter
 1 cup Milk
 1 Egg
 ½ cup Pumpkin Puree

First, sift or whisk dry ingredients together then in a separate bowl combine all wet.

Put wet ingredients into dry and mix until smooth. Let sit for 5 minutes.

Meanwhile heat up a saucepan on medium heat.

Next, wipe the saucepan with oil and pour in the batter. Cook one side until bubbles start to form then flip and repeat until batter is finished.

Finish with syrup, fresh fruit or nuts.
