The BEST Homemade Pumpkin Pie

This Pumpkin Pie may be the best pie I’ve ever made. It is rich, smooth and fragrant with a special bite from the fresh flavors.

Although we aren’t American, Thanksgiving has become a huge global eating celebration. Even in the UK, Roasts are a normal Sunday meal accompanied by pudding, which is hardly ever actual pudding but another name for dessert.

Pumpkin Pie vs Sweet Potato Pie

Pumpkin Pie is not everyone’s favorite and there is always a debate among friends on which is better, pumpkin pie or sweet potato pie.

I personally grew up on Pumpkin pie. Most Bermudians (not all) love it. It wasn’t until university where I first had sweet potato pie and I was honestly underwhelmed. It redeemed itself later on in the years but pumpkin is still king in my opinion.

About the Pumpkin Puree

Pie wouldn’t be pie without the filling. Most recipes hail from the US and call for a can of Pumpkin puree, however over here in the UK those products are hard to come by.

Making pumpkin puree sounds intimidating but its actually really simple:

  1. Cut pumpkin in half or quarters, depending on the size.
  2. Cover with foil and Bake in a 320F/120C oven for 2 hours or until pumpkin is soft.
  3. Remove pumpkin skin then place into a blender or food processor with a splash of water.
  4. Blend until smooth.

Now you can use this for pies, mash, pancakes or anything else involving pumpkin.

The Flavor Factor

Many recipes only use a little cinnamon or ready made pumpkin spice. I believe the key to a great flavored pie is the right combination of spices and plenty of them.

I use a variation of powdered spices including cinnamon, ginger, nutmeg and clove, however that is still not enough. The special guest to the show is fresh Ginger. This adds a sweet spicy bite and that punch of flavor that pairs so well with the pumpkin.

Also remember baking is something that becomes very personal, the spices and flavors you use will totally be to your liking. Lemon zest, vanilla, almond, all of these things make great additions to pies so always test and see what works for you.

Serve up this incredibly delicious Homemade Pumpkin Pie made from a perfect blend of fresh pumpkin puree, fragrant spices and rich cream.

For the Pumpkin Filling
 2 eggs plus 1 yolk
 ½ cup packed brown sugar
  cup white sugar
 ½ tsp salt
 2 tsp Cinnamon
 1 tsp Ground mixed spice
 ½ tsp Ground ginger
 ¼ tsp Nutmeg
 Zest of a small lemon
 1 tsp Fresh ginger finely chopped
 2 cups Fresh pumpkin puree (see notes for alternatives)
 1 ½ cups Heavy Cream or evaporated milk
 1 Pie crust

First, Combine eggs, both sugars, salt and spices whisking until smooth.

Next, incorporate the pumpkin puree, lemon zest and fresh ginger then finish with the heavy cream.

Here, Roll out the dough for the pie and pinch the edges together. carefully pour the batter into the shell.

Preheat the oven to 350F/150C.

Bake for 30 - 45 minutes depending on your oven. When the center springs back at touch it is ready.

Finally, remove from oven and let cool before serving. This recipe makes 2 Pies.
