Takeaway Teriyaki Mushrooms
This is such a simple dish in terms of prep but the flavors are amazing. If you need an easy, budget friendly meal under 30 minutes you got it here.

Mushrooms are so versatile, they remind me of seafood in texture and these button mushrooms always blend well with any sauce you pair them with. I added frozen peas (they are always sweeter in my opinion), red onion and then topped them off with some homemade teriyaki sauce. This is vegetarian as I used honey in my teriyaki sauce but you can easily leave that out for a vegan friendly dish. I had this over some white rice with vegan butter. Thank me later!

Super quick veggie dish you would think you ordered takeout! This meal can be done in under 30 minutes and with only 5 ingredients! To make it vegan, use teriyaki sauce without honey 🙂

In a medium sauce pan, pour in a splash of oil to heat. Now add in your red onions and mushrooms and let them cook on medium heat ( electric hob 3).
Once your mushrooms have cooked down and your onions are soft, add in your peas and parsley.
Spoon in your Teriyaki sauce a tablespoon at a time, mixing thoroughly until you reach the desired consistency.
Salt and pepper to taste and garnish with spring onion and its ready to serve.
