The Most Amazing Seasoned Yellow Rice
Seasoned yellow rice has an amazing flavor of seasoned veggies with a hint of curry and turmeric for that yellow tint.

Simple as it may be, this dish can be eaten on its own or as a side and its always a quick go to when we want something a little more poetic than white rice.
Furthermore, Yellow rice pairs well with dishes like lamb which is what was served with my Brown Stew Lamb Chops in a previous post.
Also, Seasoned Yellow rice will also go great with sautéed greens or stuffed in bell peppers and topped with cheese.
Tips on Cooking Seasoned Yellow Rice

- Season the water really well with good stock, which is key to really flavorful rice.
- Taste and adjust to your liking. It’s fine if the broth is a tad bit salty because it will cook away.
- Use Long or Short grain rice as it holds up better with longer cooking times.
- Cook on medium low, turn off and allow the rice to steam once the rice has softened. This makes fluffy evenly cooked rice.
How to Make Seasoned Yellow Rice
Seasoned Yellow Rice is packed with lots of veggies and cooked in a delicious curry vegetable stock broth for an amazing flavorful rice.

To Start, place the pot on high heat adding oil followed by the fresh thyme, parsley, garlic and chopped vegetables. Cook until vegetables have started to soften then turn the fire down to a medium.
Meanwhile, dissolve vegetable stock cubes in hot water and wash and rinse your rice to prepare to add to the pot.
Secondly, pour the vegetable stock into the pot of vegetables, then add the seasonings and butter. Once the butter has melted taste the broth to make sure there is enough flavor and add the rice.
Cover and continue to cook on a low setting until the rice has absorbed the stock and the moisture has cooked away.
Lastly, turn the fire off and allow the rice to rest. Serve immediately.
