Roasted Vegetable lettuce wraps with mango sauce & Baked wings.
Who wants a boring salad? No one! There’s something fun about a lettuce wrap. A plain ole salad could never!
I wanted to create something healthy without looking healthy (you get me?). The Lettuce Wraps are made with sweet potato, red onion, carrots, mixed bell peppers and beets. I paired it with some Baked wings with homemade teriyaki and spicy mango sauces.

There is a lot going on in this meal but I promise you it wont take all day. It has tons of flavor and its also healthy! Win Win!

Here’s the recipe:
Roasted Vegetable Lettuce Wraps with spicy mango sauce. sweet potato, red onion, carrots and mixed bell peppers and added beets were used for a fresh bite. I paired it with some Baked wings with homemade teriyaki and spicy mango sauces.

Pre-heat your oven at 200c/350f.
In a bowl, mix your sweet potato, sweet peppers, garlic, red onion and carrots.
Now you'll need to add your seasonings, herbs and olive oil. Save a handful of your fresh thyme and parsley for mixing later.
Place your veggies on a lined baking sheet and roast for 15 min.
Toss your veggies so they cook evenly. This prevents burning. You can also add a little olive oil if needed.
Once your carrots and sweet potato are soft, the mix should be ready.
Remove your veggies from oven. Put aside the 2 roasted garlic cloves and a 1/4 cup of the roasted veggies.
In a bowl, mix your chopped beets, roasted veg, spring onion and the remaining fresh herbs.
Wash and score your gem lettuce leaves at the stem so it bends easily like a taco. Fill your lettuce with your veggie mix and add your mango sauce for that finishing touch.
In a blender ( I used a magic bullet) add your mango cubes, roasted garlic and veggies, Scotch bonnet, ACV, and lime juice.
Add your coconut milk to your mixture a little at a time until you reach the consistency you want. You can also use water.
Season to taste and your good to go.
Preheat oven at 250c/400f
Wash your wings with lemon and water or vinegar and water and cut them into flats and drums.
Season and let marinate for at least 30 min.
Toss your wings in to your flour mix and place on a baking tray.
Now your going to cover your tray with foil and bake for 20 minutes covered.
After 20 minutes, remove the foil cover. Turn your chicken wings so both sides can get crisp for at least another 10 minutes.
Once your wings are cooked remove from oven to cool.
Now, you can toss your wings into whatever sauce you wish.
I used a homemade teriyaki for half of them and the spicy mango for the others.
You can place them back in the oven and bake on your sauce or serve right away.
