What is Shito Sauce

Shito is a spicy rich sauce like paste originating from Ghana. Notably, it resembles a rich chili oil with more punch of flavor from the dried fish and shrimp and also makes a great condiment to add with rice or eggs.

What’s in it?

Its made from scotch bonnet pepper, dried shrimp and fish, ginger, tomato, garlic, vegetable oil and various spices, many of the foundations we use in Caribbean Cuisine.

Roasting Brussels Sprouts

Roasting sprouts enhances their sweetness with a little added crunch.

Here’s how to Roast these sprouts:

  • Spread the sprouts, onions and peppers across a large tray and bake at 400F/270C for 30 – 45 minutes (depending on your oven).
  • The Shito lemon mixture can be added before or after they have cooked, however I personally like to add the sauce just before they have cooked for more intense heat.

This recipe will go great on any veggies you pick. Roasted tomatoes, carrots and peppers are some great options to try. Shito also pairs well with rice and shrimp so there’s no end to its versatility of flavor!

 500 g Brussels cut in halves
 ½ tsp Salt
 1 tsp Coarse black pepper
 1 tsp Onion powder
 ½ tsp Garlic powder
 1 tsp All purpose seasoning
 1 tsp Smoked paprika
 ½ Juice of lemon
 1 ½ tbsp Olive oil
 1 tbsp Butter
 ½ Medium onion chopped
 4 Sprigs of Fresh Thyme
 2 tsp Shito paste

Rinse the sprouts and cut in half.

In a large bowl, add chopped onion olive oil, thyme and seasonings.

Mix well then spread across an baking sheet and Place in the oven on 350F for 25 minutes.

Meanwhile, mix shito with fresh lemon juice and melted butter.

Pour or baste roasted sprouts then put back into the oven for 5 - 7 minutes.
