Sweet Potato Tacos with Mango Salsa

Sweet potato tacos are a super easy and healthy meal made with well seasoned airfryer sweet potatoes, fresh Guacamole and sweet and spicy Mango salsa.

For The Sweet Potato
 2 Sweet Potatoes
 1 tsp Lemon Pepper seasoning
 1 tsp Smoked Paprika
 1 tsp Onion Powder
 ½ tsp Black Pepper
 ½ tsp Garlic Powder
 1 tbsp Olive Oil
The Guacamole
 1 Avocado
 ½ Red Onion finely chopped
 Fresh Cilantro (to taste)
 1 Lime juiced
 ½ tsp Onion Powder
 ½ tsp Lemon Pepper seasoning
 ½ tsp Garlic Powder
 ½ tsp Black Pepper
 Salt
 ¼ tsp Chili flakes (or to taste)
The Mango Salsa
 1 Mango Sliced and Cubed
 2 tbsp Chopped Cilantro
 1 tsp Lemon Pepper
 1 tsp Black Pepper
 1 Lime juiced
 ½ tsp Chili flakes (or to taste)
Cook the Potatoes

Peel, cut and cube the sweet potatoes and place into a bowl. Add the oil and seasonings to the potatoes then place into the Airfryer.

Spray or drizzle with a little oil and cook on 180C/356F 18 -20 min shaking up half way. Once potatoes are tender on the inside remove from the tray and place to the side for assembling.

Make the Guacamole

Place the avocado in a medium sized bowl. use a fork or potato masher and mash the avocado until smooth.

Mince onion then add to the avocado mixture followed by the rest of the seasonings, lime juice and chopped cilantro. Season to taste.

Make the Mango Salsa

Peel and slice 1 mango then cut into cubes. Add to a bowl along with chopped onion, cilantro, seasonings and lime juice. Season to taste.
