Spicy Pineapple Shrimp

Spicy Pineapple Shrimp is a simple one pan meal using pineapples, fresh veggies and Asian inspired flavors.

 1 Pack Raw Jumbo shrimp
 1 tsp Old bay seasoning
 1 ½ tsp Ginger powder
 23 Pineapple slices (tin) cubed
 2 Spring onion chopped
 ½ Red and Yellow bell pepper cubed
 1 ½ tsp Soy sauce
 ¼ tsp White vinegar
 2 tbsp Honey
 ½ tsp Corn starch

Start by washing and de-veining the shrimp. Then, chop your vegetables preparing them for the pan.

Next, heat the saucepan and add a splash of oil. Place the pineapples in, browning them on each side. Once they have browned, remove them from the pan and add in the shrimp for the same process.

Cook the shrimp for 2 minutes or just enough to brown each side. Remove from the pan and put in your vegetables.

Saute the vegetables for 7 minutes, or until cooked to your preference. Throw in all of your seasonings then the soy sauce, honey and vinegar. Now return the pineapple and shrimp back to the pan.

Afterwards, incorporate your cornstarch (dissolve in a little water prior to adding to pan) and allow the liquid to thicken. When the sauce has thickened turn off the heat and serve.

This will serve 2 - 4 people.

I served this with white rice but you can have coconut rice, fried rice or quinoa with this dish.
