Pineapple Ginger Pork Belly bites
These Pineapple ginger pork belly bites are sweet and juicy with a burst of flavor in every bite! Made made with simple ingredients this will be a guaranteed hit with friends and family.

Wash Pork belly in vinegar water. Pat dry then coat with dry rub. You can marinate it for 30 to overnight.
Heat pan on Medium add a splash of oil. Brown pineapple chunks on each side. Remove from pan and rest to the side.
Place marinated pork belly in the pan and sear on all sides. Remove and cut into 1 inch pieces.
Add scallions to the pan and return the pork belly. Add pineapple juice, spices, honey and soy sauce. Mix well and let it come to a boil.
Continue to cook the pork belly on medium for 40 minutes or until sauce thickens and the meat is tender and easy to cut.
