Start your day off right with these flavor packed Maple & sage Breakfast sausages and southern style gravy made with Turkey meat.

Maple & Sage Turkey sausage

For the Sausage
 1 Turkey mince (Ground Turkey 500g)
 2 tsp Salt
 2 tsp Dried thyme
 2 tsp Dried Sage
 2 tsp Dried parsley
 1 tsp Mixed Herbs
 1 tsp Black pepper
 ½ tsp Dried rosemary
 ½ tsp Paprika
 ¼ tsp Nutmeg
 ¼ tsp White pepper
 2 ½ tsp Maple Syrup
For the Gravy
 ½ cup All purpose Flour
 2 cups Milk
 2 tbsp Butter
 ½ tsp Garlic powder
 ½ tsp Onion Powder
 ¼ tsp Paprika
 1 tsp Dried parsley
 Salt + Pepper to taste
For the Breakfast Sausage patties

Start by combining the turkey meat and seasonings with maple syrup. Roll into a tube shape, wrap with plastic and allow to marinate (For the best result marinate overnight).

Second, prepare the sausage meat by removing the plastic wrap and shape into patties.

Heat the pan on medium high and add a splash of oil. Place your patties into the pan and cook until brown on both sides.

Last, remove from pan and allow to rest before serving. This recipe makes 16 small patties (however I used half to make the gravy).

For the Sausage Gravy

To start, Have the pan on medium using 1 tablespoon of oil. Put in the sausage mix and break up the meat until cooked crumbles form.

Next, turn down the heat to a medium low and stir in the flour then pour in the milk and butter. Whisk or stir continuously until flour and milk have combined.

Finally, once gravy has thickened take off the stove and serve.

I served them with Fried grit cakes and the homemade Turkey sausage.
