King Fish in Coconut Ginger Sauce
A quick and easy dish to make on a busy week night. Delicious king fish steaks are cooked in a creamy, spicy herb coconut ginger sauce.

First, Clean fish in lime and water, pat dry and marinate with Green seasoning.
Next, add 2 tsp of oil to a large saucepan. Carefully place the steaks in the pan and brown on each side. Remove from the pan once the fish has browned.
To the same pan add the 3 tbsp of butter to melt then toss in the peppers, Scotch bonnet, onions, Fresh Thyme, garlic and ginger. Let this cook down until the peppers and onions are tender.
After the veg has cooked, pour in the coconut milk and add the seasonings then allow the sauce to come down (thicken).
Finally, once the coconut ginger sauce has thickened, return the steaks back into the pan and spoon the sauce over. Cook for 7 - 10 minutes or at least until the fish and sauce flavors combine.
Serve over rice or your favorite side dish.
