Ital Cornmeal Porridge Vegan & GF

Enjoy this Fast, Dairy free, Gluten Free Breakfast made from fine Cornmeal, sweet spices and my condensed coconut milk made in under 7 minutes!

 1 cup Cornmeal (fine)
 1 cup Water
 ½ cup Coconut milk (half a can)
 Salt
 Nutmeg to taste
 ¼ tsp Ground spice or to taste
 ¼ tsp Cinnamon or to taste
 3 tbsp Condensed Coconut milk (link to recipe in post)

Firstly, In a pot mix water and porridge, whisking continuously.

Secondly, Incorporate the coconut milk, the spices and salt to the pot followed by the condensed coconut milk. Keep stirring the porridge.

Lastly, Taste to ensure texture is soft and flavor is to your liking, remove from heat and serve.

This is Traditionally served with water crackers or fried dumplin but also great all on its own.
