Homemade Curry Chicken Salad
This delicious curry chicken salad is the perfect combination of sweet and spicy flavours. It's easy to make and perfect for lunchtime or light dinner.

Cut chicken strips into smaller cube sized pieces. Season with green seasoning, oil, onion and garlic powders, chicken seasoning, garam masala, black pepper and ginger paste. Mix well and rest to the side.
Meanwhile, finely chop the red and yellow peppers and cilantro and parsley. Split the onion in half then finely chop. Place one half of onion to the side and combine the other half with the pepper and herb mix.
In a medium pan on medium high heat, and add 1 tbsp oil. Cook onion until translucent, about 1 minute, then add the marinated chicken. Once the Chicken pieces are golden brown, remove from the pan and let cool.
To finish, Place the Cooked Chicken into a bowl followed by the finely chopped peppers and herbs. Add the chutney and mayonnaise and mix until creamy. Serve in brioche buns, sandwich slices or with crackers. It's also good on a salad.
