Curry Chicken wings for your soul
Its a quicker way to enjoy your classic curry chicken, but with the best part. The Wings of course.
And they are fall of the bone good!

Wash your chicken with vinegar or lemon. I rinse a few times and let it sit in a bath mixture of vinegar water or lemon water. This will kill off any bacteria.
Drain all liquid and add in all your seasonings, herbs and veg.
Let your mix marinate for at least 30 min to 1hr.
In a medium sized pot heat up 2Tbs of oil. Add in 2tsp of curry powder (im guessing here. eyeball it and add as much as you like) and let the curry brown in the oil.
Once your curry has browned you will add in your chicken.
Try to separate your herbs and veg from the chicken. You will add these in later. Its ok if you miss a few pieces.
Brown your chicken on both sides before adding your lid.
Once you add your lid, check your chicken in around 15 - 20 minutes to see if it has created its own gravy. Once you see this, cover for another 10 min or so.
After 10 minutes (or so) you can now add in your marinated veg. Add about 1/4 cup of water to your pot. This will help the veg to cook and add more liquid for your gravy.
Once your veg is cooked your dish is ready to serve.
Serve with Coconut rice, rice and peas, steamed veg, roti, you name it!
