Caribbean Seafood Curry

Quick and easy recipe for Caribbean seafood curry in under 30 minutes. This curry dish is made from a simple package of seafood mix, fresh thyme, garlic, onion, peppers and seasonings, coconut milk and don't forget the scotch bonnet. Serve with rice, rice & peas, roti or just vegetables.

 1 seafood mix
 fresh thyme
 2 tsp dried thyme
 ½ cup bell peppers
 2 tbsp curry powder
 1 tsp all purpose seasoning
 1 tsp Fish seasoning
 1 onion chopped
 1 scotch bonnet
 1 spring onion chopped
 1 garlic (use cloves chopped or minced garlic)
 ½ cup coconut milk

Place you seafood mix in a medium sized bowl. Add in 1TB of the curry powder and all of your seasonings and herbs.

Now you want to add in all of your chopped veg and mix well.

Let it marinate for at least 15 minutes.

Heat pan on medium high ( for electric cook tops number 3 or 4).
Add 1TB of oil and a sprig of fresh thyme ( optional).

Add in your 1TB of curry powder and let it brown. When you see it change color, then its ready for your seafood mix.

Put all of your marinated ingredients into the pan and let it cook for around 10 min or until the seafood starts to change color.

Finally pour in 1/2 cup of Coconut milk or half a can and turn down your head to medium low ( 2 on electric hobs).

Let your seafood simmer for at least 10 min or until your curry thickens.

Turn off stove and set aside to rest. Serve with rice or roti and veg.
