Caribbean Salt Fish Fritters

Salt fish Fritters are a popular snack across the Caribbean. these Salty, sweet and and spicy fritters are fried crisp and eaten as snacks.

Salt fish fritters

 2 cups Saltfish flaked (1pk)
 3 Spring onion chopped
 ¼ Each color Bell pepper
 1 tbsp Ginger finely chopped
 ½ Scotch bonnet finley chopped
 1 tsp Fresh Thyme finely chopped
 1 tbsp Green seasoning (See NOTES)
 2 tsp All Purpose Seasoning
 ½ tsp Salt
 ½ tsp Black Pepper
 2 cups AP Flour
 1 ½ tsp Baking Powder
 1 ¾ cups Water

First, combine flour, baking powder, salt and water until it creates a batter similar to pancake mix. Once the batter is formed add in all the remaining ingredients.

Second, heat a saucepan on high adding in 1/4 C of oil. When oil is at frying point (test using a small drop to check if the oil is hot) then spoon in your desired sized fritters and fry until golden brown.

Last, remove from pan and place to dry on paper towel or drying rack and serve.
