Bermudian Spanish Rice
Bermudian Spanish Rice, similar to Mexican and Spanish Red Rice using Tomatoes, onions and peppers to create a super flavorful side dish.

First, you want to prepare all your herbs and veg. Chop the onion, garlic and green bell pepper medium to fine and finely chop your parsley.
Next, In a large pot saute your onions, garlic and green pepper and whole thyme.
When your onions and peppers are slightly tender, Add your tin of tomatoes, tomato paste, ketchup and water. Throw in your seasonings and butter and let this come down for around 7 - 10 minutes or until sauce has thickened lightly and you can taste the flavors have combined.
Wash and drain your rice and add it to your pot. Let it come to a boil and cook on medium heat for 20 minutes or until rice starts to feel al dente. once your rice is nearly cooked turn your fire down on low and stir your rice to allow even cooking.
check on your pot often, stirring lightly. Here you are starting to dry the moisture out slowly. This can take some time depending on your stove and the kind of rice you use. Do this for at least 7 minutes (or longer, up to you) then remove your pot from the fire and let it rest.
Your rice should be moist but not mushy. Serve on its own or as a side dish. The options are limitless.
