Bermuda Coleslaw

Bermuda Coleslaw is sweet, creamy with a tangy bite making it an amazing side dish for any BBQ meal or in a traditional Bermuda fish sandwich.

Bermuda coleslaw in a self serving cup

 ½ Small Cabbage head
 4 Small Carrots
 2 Spring onions
 1 Handfull fresh parsley
 2 tbsp Granulated sugar
 3 tbsp White Vinegar
 ¼ cup Mayo of choice
 ½ tsp Salt (or to taste)
 ½ tsp Black Pepper (or to taste)

First, grate the carrots in a food processor with the grater attachment. Switch to the chop attachment and chop the cabbage, spring onion, parsley and grated carrots until the mix forms a crumble like texture.

Next, transfer the mix to a large bowl and add in the remaining ingredients. Taste and adjust to your preference then it is ready to serve.

To Note, this is a smaller serving for around 4 - 6 people. Double for larger gatherings.
