Baked Jerk BBQ Chicken Legs

Have all the goodness of Jerk chicken fresh out of the oven with these Bakes Jerk BBQ Chicken Legs made with homemade Jerk marinade.

For the Chicken
 10 Chicken legs
 2 tsp All purpose seasoning
 1 tsp Onion powder
 1 tsp Garlic powder
 1 tsp Hot smoked paprika
 1 tsp Black pepper
 1 tsp Chicken Seasoning
For the Jerk Marinade
 4 Garlic Cloves
 3 Slices of Ginger
 Handful of Fresh thyme sprigs
 2 Spring onions
 1 tsp mixed spice (or 4-5 pimento berries)
 2 Bay leaves
 1 ½ tsp Salt
 2 tbsp Brown Sugar
 2 tbsp Soy Sauce
 1 Whole Scotch bonnet
 1 Medium Onino chopped
 2 tbsp Olive oil
For the BBQ Sauce
 ½ cup BBQ Sauce (any pre made)
 2 tbsp Honey
 ½ Scotch bonnet Pepper
How to Make the Jerk Marinade

Start by Combining all the ingredients into a blender or food processor (I use a magic Bullet) and blend until a paste forms. Rest to the side and prepare your chicken.

Making the Baked Jerk BBQ Chicken

First, Clean chicken legs in vinegar and lemon remove any access fat and skin where needed, then pat dry and put in desired roasting pan. Create incisions into the meat with a knife to help enhance the flavors once marinated.

Next, mix all dry ingredients together creating a rub coating the chicken legs in addition to a generous amount of jerk mixture. Let the chicken marinate for at least 1 hour ( I prefer 3 hrs to overnight).

Second, cover the pan with foil and place into the oven on 375F/175C for 40 minutes. Again check the legs, baste and brush on the BBQ sauce. Return back to the oven uncovered for another 40 minutes on 350F/150C.

Last, switch the oven to the broiler setting, resting the chicken just under the broiler for 10 - 15 minutes or until you get the preferred char on the skin. Finally remove legs from oven and allow to rest before serving.
