Apple and Sage Turkey Sausage Rolls
These Apple Sage Sausage rolls are made with turkey mince, filled with goats cheese and rolled into a buttery puff pastry.

In a medium sauce pan, add 1 tsp of oil and saute minced apple and onion on medium heat. Add 1 tablespoon of butter and cook on low until soft. Remove from heat and rest to the side.
In a medium bowl, combine turkey mince, spices and seasonings. Add egg, breadcrumbs (more if needed) to create a paste. Fold in the apple onion mixture until all is well combined.
Unwrap and roll out puff pastry and cut into 2 sections. Spread the goats cheese onto each section then top with turkey mixture. Ensure the mixture is placed at lest 1 inch from one edge.
Use a brush or your finger and dip into egg or milk and apply onto the edges of the pastry then take the end of the pastry and fold over onto the other side.
Take a fork and press down onto the pastry to seal and fuse together. Using a knife make slits along the top of each roll and brush with egg or milk and prepare to bake.
*If you are making bites, cut them prior to baking.
Bake at 170C/350F for 20 - 30 minutes or until pastry is golden brown.
Eat on its own or with your favourite dip.
