Quick and Simple Curry Roasted Potatoes
Roasted Curry Potatoes are an easy dish you can have alone or as an awesome side dish. Also Vegan friendly, you and your kids will enjoy these jazzed up taters.

Roasted potatoes are like French fries healthier cousin. There’s something so satisfying about a crispy outside soft inside that just does it for me.
Adding curry to your roast potatoes isn’t anything new. This dish reminds me of Bombay potatoes without the onions but you can add anything your want to make this your own.
Spinach and Onions and peppers would really go well with these making it a whole meal to enjoy.

How to make Curry Roasted Potatoes
Curry Roasted Potatoes are a super easy way to level up this popular side dish made from super flavorful seasonings and spices.

To Start, boil the potatoes for 10 - 15 minutes or until tender. To follow, drain and allow to reach room temperature before seasoning.
Next, combine seasonings, herbs, oil and melted butter. Spread across a lined baking tray then drizzle with a splash of olive oil.
To Finish, bake at 425F/225C for 25 minutes or until potatoes form a crispy coating. Garnish with freshly chopped cilantro and mint and serve.
Air Fryer:
Place in airfryer basket and cook on 350F/180C for 17-20 minutes.
