Jerk Chicken Fajitas are a great under 30 minute meal. I served these with Mango salsa.

With everyone going back to work and now school there will be a lot of people looking for meal ideas. Fajitas are super easy, under 30 minute dish to make. Not to mention they are a quick and easy meal if you are a little pressed for time. Also, If you are returning to university or work long hours, you can turn them into a meal prep for the week.

For the Jerk Chicken Fajitas
 1 Pack Mini chicken breast fillets 670g (or 4 chicken breasts sliced)
 2 tsp Jerk Marinade ( I used Walkerswood)
 1 tbsp Fresh Thyme chopped
 2 tsp Hot smoked paprika
 2 tsp All purpose seasoning
 1 tsp Ground white pepper
 1 tsp Chicken seasoning
 ¼ tsp Cornstarch (cornflour)
 1 tsp Dried thyme
 1 tsp Garlic powder
 1 tsp Onion powder
 ½ tsp cumin
 ½ tsp sugar
 ½ tsp cayenne pepper
 Onion sliced
 Red bell pepper
 Yellow bell pepper
 Green bell pepper
 Oil of choice
 1 tsp Tomato paste
 Splash of water

Firstly, wash chicken in vinegar & lemon water then rinse and pat dry.
Next, Add the seasonings to the chicken Let this marinate for a minimum of 20 minutes (I like to marinate mine overnight).

Secondly, after chicken has marinated, combine with the sliced vegetables and mix well. Heat your saucepan on a medium high adding 1- 2 Tbsp. Separate your chicken pieces from the vegetables and place them in the hot pan.

Thirdly, cook the chicken until golden brown on both sides then remove from the pan. Put the vegetables in the pan, cover and allow to steam for 5 minutes or until the vegetables are slightly tender. Pour tomato paste and a splash of water and return the chicken back to the pan.

Finally, continue to cook on low for 5 -7 minutes until done.
This recipe serves 4 to 6. You can serve with tortillas or over rice or pasta.
