How to Make Sweet Potato Tacos with Mango Salsa
Sweet Potato Tacos filled with rich, creamy guacamole, sweet and spicy sweet potatoes, smoked Gouda cheese then finished with fresh mango salsa and cilantro. They make a perfect combination of sweet and savoury.

Making Sweet Potato Tacos
I must confess I am not a salad lover. We eat salads, but I personally prefer hot food which is why I came up with this dish.
Airfryer or Oven
First, slice, cube and rub the potatoes into a seasoned mix with a splash of oil. Next, roast in the airfryer. Similarly, roast them in the oven if you don’t have an airfryer.
Homemade Fixin’s
Homemade Guacamole and Mango salsa are both really simple to make. Too spicy or too much seasoning? Reduce the salt and spice for a healthier option.
Make it Plant Based
Make this dish plant based by simply removing the Cheese.

Can you store left overs?
Yes and No. There may not be left overs but If there are homemade Guacamole can last up to 1- 2 days tops. The sweet potatoes and mango salsa 3 – 4 days. Make sure to store in an airtight container.

Sweet potato tacos are a super easy and healthy meal made with well seasoned airfryer sweet potatoes, fresh Guacamole and sweet and spicy Mango salsa.

Peel, cut and cube the sweet potatoes and place into a bowl. Add the oil and seasonings to the potatoes then place into the Airfryer.
Spray or drizzle with a little oil and cook on 180C/356F 18 -20 min shaking up half way. Once potatoes are tender on the inside remove from the tray and place to the side for assembling.
Place the avocado in a medium sized bowl. use a fork or potato masher and mash the avocado until smooth.
Mince onion then add to the avocado mixture followed by the rest of the seasonings, lime juice and chopped cilantro. Season to taste.

This is an excellent idea. Never would have thought to pair pineapple and sweet potato. This makes a perfect Meatless Monday and plant based dish. Not a fan of guacamole. But would add a few slices of avocado or pear as we call it in Jamaica.
