How to make Spicy Salmon cakes

These budget friendly Salmon cakes are quick and easy to prepare and super tasty.

Growing up, my mama would make these on a Friday night or for fish Tuesday. We always had tin salmon stocked in the cupboard which is perfect for this and so budget friendly.

What Salmon to use?

With fresh salmon being so pricey nowadays, its great to think outside the box and go easy on the bank account. Tin salmon is a great alternative being half the price of fresh salmon but still great on taste.

Tinned Pink salmon has a milder taste than red and tends to be slightly cheaper but using either is fine.

You can still use fresh salmon for this recipe as well, just mince the fresh salmon and follow the rest of the directions.

Ingredients

Here are a few key ingredients used to make this dish:

  • Tin Salmon – As mentioned above tin salmon is affordable but you can use fresh too.
  • Breadcrumbs – I prefer to make my own using 1 or 2 slices of thick toast. It gives more flavor in my opinion.
  • Onions – Finely chopped and cooked in butter, they add both moisture and flavor to the salmon.
  • Seasonings – There are loads because why not! the more flavor the better.
  • Shito pepper sauce – Any hot sauce will do, however I love the dried fish flavor and heat the Shito gives.
These patties make fantastic burgers too.

How to Keep Cakes Moist?

Adding the right amount of liquid to your mixture is key. I like to use the juice from the tin along with melted butter for added flavor and moisture. This yields a Moist tender patty.

If it seams too wet its probably the right consistency just allow it to sit and let the breadcrumbs absorb any extra moisture.

Cooking Salmon Cakes

There’s no limit go how you can prepare these cakes. I personally like to pan fry them for a nice crisp coating and tender middle. A healthier option is to Airfry or place them in the oven. Just give them a good spray of oil prior for a nice texture.

  cup Onion Finley chopped
 1 tbsp Butter
 418 g Tin pink salmon
 1 cup Breadcrumbs
 1 tbsp Green Seasoning (optional)
 1 tsp Garlic puree
 ¼ tsp Jerk seasoning powder (or all purpose seasoning)
 1 tsp Aromat Seasoning
 1 tsp Old bay
 ½ tsp Black pepper
 ½ tsp Salt
 2 tsp Thyme (dried or fresh)
 2 tbsp Fresh parsley chopped
 ½ tsp Shito Pepper Sauce (or preferred hot suce)
 1 Egg
 3 tbsp Salmon water (from tin)

In a saucepan melt the butter then add the finely chopped onions. Cook until softened then remove from the heat and rest to the side.

Remove the salmon from the tin saving the salmon liquid. Place salmon into a medium size bowl then add breadcrumbs, herbs and seasonings.

Toss in the cooked onions and egg while incorporating the salmon water 1 tbsp at a time until mixture is well combined. Cover with cling film and place into the fridge for at least 15 minutes.

Once the salmon mix has rested, roll into patties.

Cook on medium high heat in a lightly oiled saucepan or in the airfryer at 170C for 7 minutes or until golden brown.
