This week has been recreate left overs week in our household and how fun it has been. I absolutely hate to waste food, especially in the given climate we are now in. Saving money and resources is priority so for our NYE in, these Mac N’ Cheese bites will be a great addition to the menu.
Baked not Fried
Yes, baked Mac N’ Cheese Bites can be just as amazing as the fried version. In fact, you will get a really good crunchy coating due to the cheeses oils seeping through to the breadcrumbs so there is no need to fry anything here.
This isn’t a healthy appetizer, however baking is way better for the waistline than adding more oil on top of whats already there.

Making Mac N’ Cheese Bites
These bites will be as good as your mac and cheese. For the cheeses I used a combo of cream cheese, Red Leicester and Mature white cheddar for a super creamy sauce. The cheesier the sauce the better it is to make the balls as cheese acts as a glue.
I personally left the extra cheesy top and balled that in with the filling which gave that extra cheesy bite. Plus, the topping is the best part right?
The balls are rolled in seasoned flour, egg mix and breadcrumbs before baked. Super easy and the results are just like the deep fried versions.
What to Pair with Mac N’ Cheese Bites
Mac N’ Cheese goes with everything! These are paired with a homemade Ranch dip however any Garlic based dip would be great with this.
Also to note, Buffalo sauce or My Red Pepper Aioli also tastes amazing with the bites which can be found here: Vegan Sweet Potato Fritters with Roasted Red Pepper Aioli.

Make Them in Advance
The Breadcrumbs help to hold their crunch so make these bites in advance and reheat them in the oven before the guests arrive.
Store them in an airtight container for best results.
