Hoisin Salmon Burgers

Salmon patties are pretty popular option for summer meal ideas, especially if your not into red meat. I’m gonna show you how I make my Hoisin salmon burgers.

Salmon is one of the most popular and easily available fish. You should have no problems finding it at your local supermarket or fish market. It can be a really strong flavored fish so if your not a fan of its smell the seasonings will definitely reduce the robustness.

This recipe uses:

  • Hoisin sauce
  • Garlic
  • Spring onion
  • Sesame oil
  • Soy sauce
  • Herbs and seasonings
  • Fresh breadcrumbs

Prepping your burger:

I prep my breadcrumbs first by pulsing them in a food processor until they are fine. I use fresh breadcrumbs because they are a natural binder and hold moisture well they also the closest thing to panko you already have in your house. 3 – 4  slices can get you 2 cups easily. You can toast them for a few minutes or leave them as they are.

Next, I wash off my salmon in diluted lemon water to kill of any bacteria and cut the smell (salmon oil is super strong). I then remove the skin, cut the slab into cubes and add them to the food processor along with the parsley, spring onion and a squeeze of lemon. Its helps you skip a few steps, trust me.

After you remove your salmon from the food processor, add in all your seasonings, sauces and oils. Throw in the breadcrumbs and an egg and mix it well. I always let it rest for at least 10 min before frying.

Cooking your burger

I made 1/2 cup sized patties, rolled them in a little flour and put them in a medium sized pan with a 1/4 cup of oil on high heat. I cook each side for about 4 -5 minutes or until they are golden brown, then place in a warm oven to ensure they are cooked through. You can skip this step if you like but I personally like to finish them off that way.

I topped my burger with some Asian inspired slaw and Hoisin mayo I made with Hellman’s (the best mayonnaise of course), Chipotle hot sauce and lime juice. This was a banging burger!

 1 Salmon Slab (470g)
 2 cups Fresh breadcrumbs
 ½ Lemon
 Handful of parsley
 ¼ tsp white pepper
 ½ tsp fish seasoning
 ¼ tsp garlic powder
 ½ tsp onion powder
 2 tbsp Hoisin Sauce
 1 tsp soy sauce
 ¼ tsp sesame oil
 1 egg

First, prep your breadcrumbs by pulsing them in a food processor until they are fine. If you don't have a food processor cut and cube your bread and toast them in the oven for a few minutes before breaking them up with your hands.

Use a 1/2 cup scoop to size your patties (totally optional). Roll the patties in flour to prepare them for frying.

Add a 1/4 cup of oil to your pan and place on medium high heat (electric hub 4). Place your patties in the pan and cook each side for about 4 -5 minutes or until they are golden brown.

Serve them on their own or as burgers. I topped my burger with some Asian inspired slaw and spicy hoisin chipotle mayo.
