Here’s how to make Caribbean Cornmeal porridge.
This is a great breakfast alternative for oatmeal or your regular old cereal and milk.
My partner and I are from different islands, however we both grew up enjoying this traditional breakfast. Every island makes it slightly different with the same result. Sweet and creamy gold.

I always remember some mornings waking up to that sweet smell of vanilla and cinnamon. We usually have this in the winter as it warms your belly just right, but I make it when the craving hits me.
There are so many variations to making this dish. All you need is yellow cornmeal, coconut milk (or your favorite milk), water, nutmeg, cinnamon, salt and condensed milk. If your vegan leave out the condensed milk and add more coconut milk and sugar to sweeten.

In a medium saucepan on medium heat (electric hub 3), add water, coconut milk. Let it come to a slight boil.
Pour in your Porridge and salt and stir continuously until smooth. Don't stop stirring! This will keep the cornmeal from lumping.
Add in the cinnamon, nutmeg and vanilla. Keep stirring until it thickens.
When Porridge is smooth and thickened, add in your condensed milk (or milk alternative plus sugar) to your desired thickness. Remove your pot from the heat and serve immediately.
You can add fruit or any topping you wish, or just have it plain. It's that good!
