Healthy Mushroom Quinoa Lettuce Wraps

These Mushroom Quinoa Lettuce Wraps are not only packed with protein and high in fiber, they are loaded with flavor! This is a great low carb vegan lunch even meat eaters will enjoy.

The beginning of the month is the most popular time for everyone to switch up eating habits, especially the bad ones from the past month (or 5). Add on the recent number of lock downs most of us have experienced last year and boom 15lbs later we are all wondering what happened?

For Veganuary (Vegan January) I wanted to introduce some of my go to vegan dishes that are healthy and satisfying.

These wraps are seasoned with smoked paprika, garlic and onion powders and topped with a drizzle of homemade ranch dressing using Hellman’s Vegan Mayo and finished with shavings of my favorite (so far) vegan Cheese, Sheese Red Leicester from Brute Foods.

Both brands can easily be found at your local Health food store. For us its Holland & Barrett but the larger supermarkets like ASDA, Sainsbury’s and Tesco have really stepped up their vegan brand offerings as well.

Lettuce Wraps

Lettuce wraps are a great way to have a taco night without worrying about carbs. Not to mention this is a much more fun way to eat lettuce besides a salad.

Here are my favorite types of lettuce to use with wraps:

  • Romaine – Long like a taco shell and naturally curvy, romaine is great for scooping up any filling.
  • Butter head – It’s soft buttery cups have a great flavor and create a natural round shape.
  • Little gem – Very similar to romaine but smaller and a little softer.

Choosing the Quinoa

Quinoa is amazing because it comes in various options. Here I’ve used black quinoa. It is nutty, crisp and paired with the mushrooms, creates a great taco meat texture.

The 3 most popular types are:

  • White quinoa – is the easiest to find and is the most versatile. Its the lightest in texture and mildest in flavor which is why it is to widely used.
  • Red quinoa – is the thicker option with a nutty flavor. It also holds up well on its own making it one of the strongest options to use.
  • Black quinoa is the healthiest option. It has the highest fiber content and gives a beautiful nutty flavor. It is also light in texture so it pairs well with other ingredients but does not overpower.

What Mushrooms to use

Use any kind you wish. I love brown button or cremini mushrooms as they have more flavor and keep its plump texture when cooked, but get wild with this and make it your own.

 ½ cup Quinoa Cooked
 1 cup Mushrooms (I used brown button)
 2 tsp Onion Powder
 1 tsp All Purpose seasoning
 1 tsp Smoked Paprika
 ½ tsp Garlic Powder
 ½ tsp Ground Black pepper
 ¼ tsp Cayenne Pepper
 1 tsp Fresh Thyme
 2 tbsp Vegan Butter
 ½ Medium onion chopped fine
 1 tbsp Oil
 Romain lettuce

Heat Oil in a medium sized pan then add the onions and mushrooms. Saute until softened before adding in the quinoa, butter and seasonings. Mix well and cook until flavors have combined.

Fill desired lettuce cups and top with favorite dressing and dairy free cheese.
