Chipotle chickpea salad with cilantro lime dressing
This chipotle chickpea salad is a little spicy, smokey goodness topped with that tangy rich cilantro lime dressing I made from my previous post. It’s vegan friendly and packed with protein and vitamins.

Salads are never that complicated to make and this chipotle chickpea salad only requires sautéing your chickpeas to really enhance the flavor of the bean.
What you’ll need:
Chickpeas – protein packed with a meaty flavor once warmed up. Chickpeas, We stan!
Seasonings – the chickpeas will bathe in a wicked blend of smokey and spicy South West flavors.
Cracked Bulgur wheat or Quinoa – both filling and full of protein and vitamins.
Cilantro lime dressing – Its packed with flavor that gets your eyes rolling once combined with the chickpeas and greens.
The greens – Use any combination you like. Its all good.
What you’ll need for the chickpeas
- 1/2 C chickpeas rinsed and drained
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp seasoned salt
- 1/4 tsp pepper
- 2 Green onion chopped
- Fresh parsley chopped
- Fresh cilantro chopped
- Splash of olive oil
In a bowl combine your chickpeas and spices.
Next, Place your saucepan on a medium high heat (electric hub 4) with a splash of olive oil. Sauté your green onions first, then add in the seasoned chickpeas. Toss in your fresh cilantro and thyme and let this cook for around 7m minutes (give or take). Let this cool down before adding to your fresh leaves or they will wither (and thats not nice is it?).
For the Salad Base
I started with some curly blend lettuce and cucumber with fresh parsley and used cracked bulgur wheat because I had some in the fridge but Quinoa tastes really good with this as well.
Remember it is a salad so other than the chickpeas there’s no one way to create this. Add tomatoes, corn, beans…you name it!
Once you have mixed your salad, its time to add that beautiful cilantro lime sauce to bring it all together.
