Low Carb Lunch idea: Brown Stew Chicken Strips with Cauliflower Rice
Brown Stew Chicken strips are marinated in Caribbean seasonings, pan fried then coated in a flavourful gravy all over a bed of low carb sauteed cauliflower rice.

What is Cauliflower “Rice”?
Cauliflower “rice” is coarsely grounded cauliflower. This dish has become increasingly popular particularly with Keto and low-carb meals. Full Green is a known for creating sustainable non-GMO prepackaged riced cauliflower products in various flavour options. They also have a long shelf life and cook in under a minute.

Making Brown Stew Chicken Healthy
Although not completely low fat, it’s a great low carb, gluten free lunch or dinner option.
How its cooked
Chicken strips are marinated in a blend of Caribbean seasonings, pan fried crisp then coated with a rich coconut tomato based sauce using fresh peppers, scallion, onion, garlic and thyme.
I tried Full Green’s original riced cauliflower adding my personal touch to create a full on flavour bowl of non carb goodness.

When in doubt, sub it out
Most of the ingredients are fresh and pretty healthy, however, for the super health conscious, leave out the gravy or omit the butter.
Sub the chicken for tofu for a leaner protein and instead of pan frying, they can be cooked in the airfryer.
