How to Make the Ultimate Bermuda Fish Sandwich

A Bermuda Fish sandwich is fully loaded with flavor. You definitely will not want to eat an ordinary fish Sandwich again.

The ultimate Bite: Bermuda Fish Sandwich

Ordering a fish sandwich in Bermuda is like getting a full course meal packed into one BIG bite. They are a lunchtime treat sometimes served with a side of peas and rice.

What is in a Bermuda Fish Sandwich

  • Local caught fish floured and fried
  • Melted cheddar cheese
  • Homemade tartar sauce
  • A heaping dollop of slaw
  • Sliced tomato

It is all packed between 2 slices of buttered whole wheat or raisin bread. The combination of sweet, tangy, salty and crunchy is a whole explosion in the mouth.

Choosing the Right Fish

This fish sandwich is fully loaded with fresh cod, melted cheddar, Bermudian coleslaw, freshly sliced tomato, homemade tartar sauce and homemade raisin bread.

Living in the UK calls for improvisation so a pack of fresh Cod Fillet always does the trick, but any white meat fish works just fine.

Usually, the fish is lightly floured then fried, however Cod is slightly thicker. Adding a double coating will allow the Cod to steam on the inside while its frying which makes a more tender fish.

Quick Tip:

Marinate the fish with a little salt and hot sauce before dipping in the flour- egg mixture and the result is a well flavored fish inside and out every time.

If using a thinner white fish such as Sea Bass or Tilapia, a single coat of seasoned flour will work fine.

Fish
 1 Package of Fresh Cod Fillet (Try to find local fish if applicable)
For the Dry Ingredients
 ½ cup All purpose flour
 ½ cup Dried Breadcrumbs
 4 tsp Seasoned salt
 1 tsp Old Bay seasoning
 1 tsp Dried Parsley
 ½ tsp Black pepper
For the Wet Ingredients
 1 Egg beaten
 Pinch of salt
 23 Drops of Hot sauce

Preparing the Fish

Start by washing the fish in lemon water then drain and pat dry. Season with salt and hot sauce and place to the side.

Next, prepare your dry and wet mixes by combining all the dry seasonings in a shallow bowl or container followed by the wet in a separate bowl or container.

Following the dry and wet mixes, preheat the pan on high and add in the oil.
Dip your fish in the flour, then the egg, then back into the flour.

When the oil is hot, carefully lay the fish down into the pan and fry until both sides are golden brown.

To finish, remove the fish from the hot oil and let rest either on paper towel or a cooling rack to prepare to build the sandwich.

To Start, Toast and butter the bread of choice then add the layers of Fish.

Next, take your cheddar and put it on top of the fish and allow it to melt under a broiler.

To Finish, top with slaw and freshly sliced tomato.
