Awesome Chicken tacos: Taco Tuesday
Its been a minute since I’ve made tacos. I don’t think I’m particularly great at it but this time I think I put my foot in these tacos! Here’s what I made for Taco Tuesday.
I decided to make pulled and fried chicken tacos just for variety. I didn’t have thighs, which is the go- to for chicken tacos but I knew how to work with the chicken breast I had in the fridge.
TIP: How NOT to dry out chicken breast
Because there is more meat than fat, chicken breasts are easy to dry out especially in the oven. The key to keeping them moist is to cover them.
First, I marinated my chicken with olive oil, garlic and onion powder, cumin, cayenne, paprika and seasoning salt. I then covered the pan with foil and baked at 350°F/150°C for about 20min (maybe more maybe less). I definitely based them which helps keep them moist.

Get this: Cilantro lime sauce! To be honest I don’t love cilantro but I’ve grown to like its complex flavor. I found a good recipe from Carolyn cope which was pretty straight forward. This sauce is the BUSINESS. It’s super easy to make too.
Cilantro lime sauce is made with: Olive oil, garlic cloves, fresh cilantro, lime and a pinch of salt.
I blended it all together in my magic bullet in literally 2 minutes!
The combination of flavors was amazing. The pulled chicken was so good. The fried is always good but I preferred the pulled as I tasted the flavor more and its healthier.
To finish, I topped my tacos with a little pico de gallo, avacado, cilantro lime sauce and fresh lemon cream ( taste like sour cream), and finished off with a little feta, because queso is not easy to find.
