Asian inspired slaw

I find myself experimenting with different versions of coleslaw because my partner cannot stand Mayonnaise. Its honestly blasphemy, I love the stuff. It’s the best invention next to peanut butter! But Asian slaw is also just as amazing. Here’s how I make my Asian inspired slaw.
This is a super simple recipe using only a few ingredients you already have in your kitchen:
- Vinegar (rice wine or distilled)
- Sugar (white or coconut)
- Soy sauce
- Sesame oil
- Lime juice (i love the taste)
- Salt
- Pepper
- Cabbage
- Carrots
- Spring onion
- Red Bell pepper
Now of course you can add or subtract anything here. Sometimes I use purple cabbage and other times I may add some sesame seeds or almonds. Upgrade it however you like.
How to mix your slaw
I recommend making your dressing ahead of time so you can taste as you go. Its literally takes 5 minutes.
Shred your cabbage and carrot, chop up your other veggies and mix well.
I prefer to mix in the dressing just before I’m ready to serve. It keeps the veggies crisp. No one wants soggy slaw.
I paired with with my Hoisin Salmon burger but you can definitely have this with any meal.

Combine your vinegar, sugar sesame oil, soy sauce and lime. Add your Salt and white pepper to taste. Rest to the side.
Shred your cabbage and carrots to your desired thickness. Chop your parsley, red bell pepper and spring onion. Mix all together.
Just before your ready to serve, incorporate your dressing into your cabbage mix and toss well. This will keep the veggies fresh and crisp.
