Making Apple Sage Sausage Rolls with Turkey
These are no ordinary sausage rolls. They are packed with flavour and ready for breakfast or for your next party.

The Ultimate Rolls
These Sausage rolls are fully loaded! Turkey mince seasoned with sage and spices and sweet tart apple all rolled into a puff pastry with goats cheese for an extra bite.
If this sounds good, then your in the right place. Theses rolls are an adaptation from my Turkey breakfast sausage recipe with added flavour perfect for the fall season.
What Meat to Choose
Turkey is the next best option for flavour especially for households with mixed dietary needs like mine. This is a great option for those who don’t eat pork or red meat and it has more flavour than chicken.
As with most things, switch out the turkey for any preferred meat of choice.
Key Ingredients
Here are a few key ingredients you will need to make these rolls:
- Ready Roll pastry – Any brand will do, just make sure it says “puff pastry” not short crust.
- Apples – Use an apple with a sweet and tart balance. They pair best with the meat.
- Goats Cheese – Its soft and Tart and goes well with the other flavours.
- Sage – The main flavour to bring this dish to life.

Making the Rolls
Here’s a few tips to keep in mind when making sausage rolls:
- Ensure the puff pastry is cold. If the pastry is too warm it will become gooey and very loose.
- Brush egg wash or a little milk onto the seems prior to sealing. This helps to fuse the dough together.
- Once the rolls are sealed, press to seal using a fork.
- Use a knife to create slits on the top to reduce any air pockets. Brush with more egg or milk to brown tops.
These baked right away via oven or airfryer. Keep them whole or cut them into bite sizes.
How to store Sausage Rolls
Keep the uncooked rolls in an airtight freezer bag and freeze for up to 3 months. I recommend cutting them into smaller rolls or bite sizes for storage purposes. These bite size rolls will also be good to save for future brunches or parties.

These Apple Sage Sausage rolls are made with turkey mince, filled with goats cheese and rolled into a buttery puff pastry.

In a medium sauce pan, add 1 tsp of oil and saute minced apple and onion on medium heat. Add 1 tablespoon of butter and cook on low until soft. Remove from heat and rest to the side.
In a medium bowl, combine turkey mince, spices and seasonings. Add egg, breadcrumbs (more if needed) to create a paste. Fold in the apple onion mixture until all is well combined.
Unwrap and roll out puff pastry and cut into 2 sections. Spread the goats cheese onto each section then top with turkey mixture. Ensure the mixture is placed at lest 1 inch from one edge.
Use a brush or your finger and dip into egg or milk and apply onto the edges of the pastry then take the end of the pastry and fold over onto the other side.
Take a fork and press down onto the pastry to seal and fuse together. Using a knife make slits along the top of each roll and brush with egg or milk and prepare to bake.
*If you are making bites, cut them prior to baking.
Bake at 170C/350F for 20 - 30 minutes or until pastry is golden brown.
Eat on its own or with your favourite dip.
