A Quick and Easy Lamb Stuffed Potato Cakes

These lamb stuffed potato cakes are simple and delicious making a great appetizer for the upcoming festivities.

With this week sandwiched in-between Christmas and New Years using up left overs is still a necessity.

Potato cakes are an easy go to when you have left over mashed potatoes. Not to mention they are super easy to put together and make a really good appetizer. These were made using all left overs from the fridge from the mashed potatoes to the Aioli dip.

Stuffing potato Cakes

Potato cakes are really good on their own. Like fluffy savory pancakes, but stuffing them with meat, cheese or veg adds that extra kick of flavor.

I decided to stuff mine with some left over lamb from Christmas. It was fork tender so easy to mince and throw in.

No Left Overs No Problem

These can me made all year round. Whip up some mashed potatoes however you like them and follow the instructions.

The filling can vary as mentioned above. Make these vegetarian with any favorite vegetable, or fill them with Cheese.

Storing Left Over Cakes

These keep well in an airtight container for up to 4 days. I personally have never had to freeze these so unfortunately I’m unaware of freezing times.

I doubt these will last long enough to consider this! Your guests will love them!

These Stuffed potato cakes are filled with minced lamb, fresh herbs and onion with an added kick of mint and chili.

Lamb Stuffed Potato Cakes

The Lamb Filling
 ½ Onion Finely Chopped
 1 Garlic clove minced
 2 tsp Fresh Mint
 2 tsp Fresh Parsely
 1 tsp Fresh Rosemary
 1 tsp Fresh Thyme
 1 cup Lamb meat finely chopped (or ground)
 Ground Mix spice
 1 tsp Zatar Seasoning
 ½ tsp Smoked Paprika
 1 tsp Chili Paste
 2 tbsp Mint Jelly (optional)
 Salt to taste
The Potato Cakes
 3 ½ cups Mashed Potatoes
 2 Eggs
 1 ½ cups All Purpose Flour
 Salt & Pepper to taste

Making the Filling

To start, finely chop the onion, garlic and herbs.

Heat a medium sized pan and add 2 tsp of oil. Saute the finely chopped onions, garlic and herbs until fragrant.

Once the onions have cooked, toss in the lamb meat, ground spice, Zatar seasoning, Chili and smoked paprika (add salt and pepper to taste).

Finally Remove from the heat, add in the mint jelly and prepare to fill the potato mix.

In a large bowl place the mashed potatoes. Drop in the eggs one at a time until well combined then gradually incorporate the flour (add salt and pepper if needed).

Next, lightly dust your hands with flour and spoon about 1/4 cup of potato mixture into one palm creating a bowl shape. Place 1 tablespoon of lamb mince into the center then pinch the sides together to close.

Here, create a patty shape ensuring the lamb is fully covered then prepare them for frying.

To Fry: Heat a large pan on medium high adding 2 tablespoons of oil. When oil is hot carefully place the potato cakes into the pan and cook on medium heat for 7 minutes on each side or at least until golden brown and sides firm up.

Finally, remove from the pan and let rest for a few minutes before serving. This recipe makes 10 medium sized patties, however you can make them any size you like.
